All of our Ice Cyder is made from the first, 'virgin' press of the freeze-thawed apples which create our Iced Apple Juice.
This differs from other Ice Ciders, which are produced from freeze-concentrated apple juice.
This is why our products are spelt 'cyder' and not 'cider', as we only use virgin press apple juice and never juice from concentrate.
We allow natural yeasts to take hold of the juice and work their magic to create our

Our Deliciously Sweet apple juice comes from a wide range of locally sourced UK apples.
The artisanal nature of our production process means that each batch is beautifully unique.
Due to our unique freeze-thaw method, the colour of our juice varies with the natural bloom of the apples we use.
We believe this reflects the fantastic natural diversity of apples which decorate our UK landscape.
These include traditional varieties such as Discovery, Worcester, Russet, and Cox.

We pride ourselves on our eco-friendly approach, from our initial goal of reducing food waste from perfectly good local apples, to collecting and recycling our bottles and only using biodegradable and compostable cups at our festivals and events!
Our waste apple pulp is welcomed by our local farmers pigs and cattle, who enjoy this as a tasty treat!
Since arriving in the Cotswolds, we have been in awe of its timeless charm and natural beauty, making us proud to call it our home. During our first Winter, we were surprised to notice entire orchard floors carpeted with fallen apples, left to mulch the soil or provide a winter buffet for visiting birds. Even more surprising was a trip to the local supermarket, to find the apples on sale had arrived from as far away as China during the UK season's prime.
We decided that these apples contained too much heritage and character to simply go to waste and began building Broadway Press. We work closely with local growers to obtain and process as much of their Class II crop as possible so that apples which are considered too big, small, unshapely or discoloured have a new lease of life in the form of our exciting new product range. We use several varieties of otherwise immaculate apples, making each batch beautifully unique.
Our freezing method provides us with yet another great advantage here - in addition to processing our apples for us, it also preserves them for months longer than they would be traditionally, helping to reduce food waste even further.
One of the many majestic features you may be lucky enough to encounter are the abundant apple orchards, some many decades old, with trees that despite their gnarled and wizened appearance, stand stoically in the face of the elements to produce an abundance of delicious fruit every autumn. It is our aim to ensure this integral part of the Cotswold landscape remains for future generations to be enjoy by highlighting the true value of the apples we have inherited.
THE FREEZE-THAW METHOD
Inspired by nature
At Broadway Press, we take inspiration from Mother Nature to develop our unique flavours. When an apple freezes, something magical happens, and when thawed it provides a sensational drinking experience.
Our freeze-thaw apple inspiration comes from Henry David Thoreau, a 19th century American naturalist and philosopher, who was perhaps the first to observe and record its extraordinary properties in his book, Wild Apples, 1862. In North America, this method occurs naturally during the cold winter months. Having famously spent 2 years, 2 months and 2 days living a simple life in the woods, he had become well accustomed to foraging for wild foods and held the freeze-thaw apple in the highest regard.
“All apples are good in this state, and your jaws are the cider press. Others, which have more substance, are a sweet and luscious food, in my opinion of more worth than the pineapples which are imported from the West Indies.”
During the freezing process, ice crystals are formed within the apple structure causing each cell to burst open and release a heavenly flavour. Compounds responsible for the beautiful taste and fragrance of an apple are concentrated, distilling a rich bouquet for your taste buds to savour.
“Those which a month ago were sour, crabbed, and quite unpalatable to the to the civilised taste, such at least were frozen while sound, let a warmer sun come to thaw them, for they are extremely sensitive to its rays, are found to be filled with a rich, sweet juice, better than any bottled juice that I know of, and with which I am better acquainted than with wine”.
Apple juice is usually made by crushing apples to a pulp, known as pomace, which is then pressed to squeeze out the juice. This process releases large amounts of fibre and pectin, the chemical responsible for ‘cloudiness’.
Our freezing process breaks down pectin, minimising the ‘haze’ found in traditional juices. With no need for crushing, there are virtually no apple solids in suspension either, providing our juice with superb clarity.
“Now we greedily fill our pockets with them, bending to drink the cup and save our lappets from the overflowing juice, and grow more social with their wine.”
Freezing also provides a wonderful depth of colour to the juice. Unlike traditional methods, the flesh is kept from ‘browning’, caused by the exposure of tannins (chemicals associated with bitterness) to air. In addition, the bursting of cells in the apple skins often releases colour pigment, adding a natural, signature dye to each batch.
The absence of pectin changes the viscosity of the juice, adding body, texture and substance to your drink. The preservation of tannin during freezing also provides a much ‘cleaner’ taste, so you'll never be left feeling bitter-sweet.
